Brian Mills is the President and co-founder of CHOP5 Salad Kitchen. Brian has also served as the Owner and President of SD Custom Pizza in San Diego, CA; Owner/President of PJCOMN and Vice President/Operating Partner of AJ Pizza, LLC., which owned and operated 100 Papa John’s Pizza units in Colorado, California and Minnesota.
Thank you so much for doing this with us! Our readers would love to ‘get to know’ you a bit. Can you share with our readers a story about what inspired you to become a restauranteur or chef?
I remember this clearly. When I was a little kid, I went to McDonald’s on a Boy Scout tour, and I saw a sign that said “1 Billion Sold.” I thought, “Man, imagine if you could ever sell a billion of something…”
They used to put that number on the marquees for hamburgers, and it stuck in my head. My father was an entrepreneur — a true entrepreneur. He started businesses from scratch, and I saw both the good and the bad that came with it. So, I decided to go into the franchise segment to balance things out. I knew I wanted to do something on my own, but I didn’t initially intend to go into the food industry. It just kind of found me.
